A New Kind of Grilled Cheese

One of our educators, Chef Milen, made this fun play on the classic grilled cheese. Jazzed up with apples and watercress it was a hands down winner in the class. It’s maybe a step towards getting the “picky” eaters towards new food adventures. And hey, watercress is a pretty tasty treat — no matter the age!

Open-Faced Cheddar Cheese and Apple Sandwiches with Watercress
Serves 6
1/2 lemon, juiced
2 Granny Smith apples, cored, and thinly sliced
6 slices multi grain bread
6 to 8 slices cheddar cheese
1 bunch watercress, washed and loosely cut
1 bunch parsley, washed and loosely cut
salt/ pepper

1. Sprinkle a little lemon juice over the apple slices and toss together. (The lemon juice will keep the apples from oxidizing and turning brown.)
2. Preheat the broiler. Arrange the 6 slices of bread on a tray. Top with apple slices then a slice of cheese. Broil until the cheese melts. Remove from broiler and top with watercress and parsley.
3. Sprinkle with a dash of salt and pepper.
