As seen on NY1: on Sunday, June 11th, Allergic to Salad teamed up with Yankees alumni Ramiro Mendoza and Bareburger Culinary Director Jon Lemon to prepare Bareburger’s signature falafel cups. Our students picked, sampled and chopped some fresh mint for a yogurt sauce, crumbled feta for a spicy feta spread, and learned about the ingredients that compose the Bareburger falafel (fava beans, chickpeas, tahini, garlic…). We then plated our falafels over some hand picked little gem lettuces. 

If that combination makes your tastebuds tingle, head over to Barebuger on 31st Avenue in Astoria from Friday June 23rd–Friday June 30th to get your own. All proceeds from the falafel dish that week will be donated to Allergic to Salad to support equipment purchases in our underfunded school programs.

FALAFEL CUPS

Recipe: Yields 8 Cups

Ingredients:
Mint Yogurt Sauce:
1 heaping cup plain yogurt
1 tablespoon + 1 teaspoon lemon juice
1 tablespoon + 1 teaspoon chopped mint
1/2 teaspoon garlic
1/8 teaspoon cumin
1/4 teaspoon salt

Spicy Whipped Feta:
6 ounces feta cheese
1/2 cups mayo
2 teaspoons garlic
1/4 teaspoon cayenne

Green Hummus:
2 cups green chickpeas
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons water
1/4 teaspoon coriander
1/4 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
6 pieces fresh chopped garlic

Falafel Cups:
8 Pre-Mixed Fava-Bean Falafel Balls
8 Lettuce Cups

Instructions:

For the Mint Yoghurt Sauce:
1. Combine all ingredients in a food processor (or blender) and pulse until combined.

For the Spicy Whipped Feta:
1. Combine all ingredients in a food processor (or blender) and pulse until combined.

For the Green Hummus:
1. Combine all ingredients in a food processor and pulse until combined.

For Assembly:
1. Heat organic canola or corn oil to 350 F
2. Fry 4 Falafel Balls for 2 minutes at 350 F
3. Place the 4 Lettuce Cups on a long burger tray with wax paper
4. Add the Spicy Whipped Feta to each Lettuce Cup
5. Add the Green Hummus on top of Spicy Whipped Feta
6. Place the Falafel Balls on top of the Green Hummus
7. Drizzle Mint Yogurt Sauce on top of the Falafel Balls
8. Enjoy!
