Where are you from?
Born and raised in Colorado. I’ve also lived in Ohio, Maryland, Massachusetts, and now Connecticut.
Which ATS classes do you teach/what ages?
I teach middle schoolers in the Bronx.
What led to your interest in food?
Competitive bodybuilding, actually!
When I was 14 years old I started to lift weights and quickly learned how powerful food is in shaping our health and how we feel each day. From there my interest in food has evolved into a global awareness about how our food choices influence everything around us including soil, air, water, farmers, animals, and so forth. Needless to say, our food choices are a really big deal.
How did you find Allergic to Salad?
I learned about ATS on goodfoodjobs.com. And I was really impressed after meeting Stacey. She has a really positive, yet practical energy when it comes to helping kids with nutrition.
Well, I’ll give you an entire food group as my favorite ingredient: Legumes.
Legumes are so versatile. Plus they are tasty, nutritious, don’t involve animals, and have a light environmental footprint.
Hummus or granola. Hummus and granola are a big part of my own diet, and they can be tweaked in so many ways when making from scratch. So, I love sharing how to make them at home. (Plus, they are wicked cheap when making homemade!)
Describe a Memorable Moment from one your classes:
I always like to ask my classes why their individual food choices matter.
Health and body weight are common responses. But it’s extremely rare to have any of them mention that what they eat influences the planet, farmers, or animals.
This is a very powerful reminder for me and reinforces how important it is to teach kids about where food comes from.
How do you spend your time when you’re not teaching?
- Writing or reading
- Listening to audiobooks/podcasts
- Moving my body (walking, yoga, weights, biking, etc)
- Teaching yoga
- Listening to music
- Watching movies/TV/documentaries
- Doing anything with my wife, who is amazing
If you could have a meal with anyone, living or dead, who would it be and what would you eat?
I’d meet Donald Trump for dinner at a vegan restaurant in NYC and talk about sustainable nutrition and food policy.
