Let’s Make Rainbow Sushi!
Sushi is not only delicious, but not too complicated to make! We will be using veggies that you likely already have in your fridge, you won’t even notice that there is no fish! You’ll start off preparing your sushi rice, which is seasoned with rice vinegar. Let it cool to room temperature, it will be sticky.
Then, you can pick your rainbow fillings, which you’ll want to cut into thin strips.
Some color ideas include:
Red – Bell pepper
Orange – Carrot, Sweet potato
Yellow – Mango, Bell pepper
Green – Scallions, Cucumber, Avocado
Purple – Cabbage
“Eating a rainbow” is not only pretty, but a fun way to ensure you are eating a wide variety of vegetables with healthy nutrients. Once you have your rice and vegetables prepared, you can start rolling! Using nori with the shiny side down, you can lay your vegetables into a line horizontally, about 1-inch from the closest edge, across the rice. Then, you will fold the roll over itself and tightly seal the edge with some water. It will look like a burrito, so you can transfer it and cut it into pieces of sushi.
Make sure to snap a photo of your beautiful sushi roll and enjoy with some soy sauce, pickled ginger, or wasabi. Practice your chopstick skills for an even more authentic experience.
