- 1-2 mangoes, peeled and diced
- 1 Persian or Japanese cucumber, peeled and diced
- 2 limes, juiced (about 1/4 cup)
- 1 small bunch cilantro, roughly chopped
- 1/2 teaspoon salt, plus more if desired
- pinch cayenne pepper (*optional)
- Combine all of the ingredients in a bowl. Toss, taste, and adjust seasonings as necessary. Serve atop tofu steaks.
