A Fun Classroom Moment with Fried Rice

I remember the first time I made vegetable fried rice with my students. I thought, “This will be a fun, simple dish that they’ll enjoy!” As the sizzling sounds filled the air and the sweet smell of ginger and garlic spread through the room, I couldn’t help but smile. But then, one student, who normally avoids veggies, came up to me and said,

“I can’t believe I like this! It’s so good Another student, J, took one bite, paused, and said, “This is better than takeout!”

That simple compliment made my day. It was a true “aha” moment—seeing students realize how easy and delicious it can be to cook healthy meals at home. Whether they were learning to sauté vegetables or mastering the art of perfectly cooked rice, each student took something special away from this dish. It’s not just about cooking—it’s about discovering the joy of making something from scratch and sharing it with others.

Vegetable Fried Rice Recipe

Makes 12, ⅓ cup tasting portions

Ingredients:

 2 cups cooked white or brown rice (day-old rice works best—make at home)

 2 tablespoons vegetable oil

 2 cloves garlic, minced

 1-inch piece of fresh ginger, grated

 1 small onion, finely chopped

 1 cup diced carrots

 1 cup frozen peas

 1 cup diced bell peppers (any color)

 1/4 cup soy sauce (adjust to taste)

 1 tablespoon sesame oil

 2 green onions, sliced (green parts for garnish)

 2 eggs, lightly beaten (optional)

Instructions:

1. Prepare the Rice:

o If you haven’t cooked the rice yet, cook it according to package instructions and let it cool. Day-old rice is ideal for fried rice as it separates easily.

2. Heat the Skillet:

o In a large skillet, heat the vegetable oil over medium-high heat.3. Add the Aromatics:

o Add the minced garlic and grated ginger to the skillet. Stir-fry for about 1 minute until fragrant.

4. Cook the Veggies:

o Add the chopped onions and diced carrots to the skillet. Stir-fry for 2-3 minutes until the onions become translucent and the carrots start to soften.

o Stir in the frozen peas and diced bell peppers. Continue to cook for an additional 2-3 minutes until the vegetables are tender-crisp.

5. Scramble the Eggs (Optional):

o If using eggs, push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked, breaking them into small pieces.

6. Add the Rice:

o Add the cooked rice to the skillet and toss everything together, mixing well with the vegetables.

7. Season the Rice:

o Pour the soy sauce and sesame oil over the fried rice, and toss again to coat all the ingredients evenly. Cook for another 1-2 minutes, allowing the flavors to meld and the rice to heat through.

8. Garnish and Serve:

o Remove the skillet from the heat. Garnish with sliced green onions on top.
