This week our educator Tim made mini mushroom quiches in muffin tins! Students loved chopping and mixing the batter.

Easy mushroom quiche recipe:

  • shiitake or button mushrooms, cut into quarters
  • 1 small onion, finely chopped
  • 2 eggs, beaten
  • 1/4 cup semi-skimmed milk
  • large pinch of black pepper
  • large pinch of nutmeg
  • cheddar cheese, finely grated

Preheat oven to 350 degrees. Finely chop onions and mushrooms. Heat oil in a small frying pan, add the onions and cook for a couple of minutes until softened, then add the mushrooms and cook for a further few minutes. Transfer to the muffin tray. Mix the eggs with the milk, black pepper and nutmeg. Pour into the muffin tray and sprinkle on cheddar cheese. Bake for 15 minutes until risen and brown.
