This highlighted recipe is Spicy Eggplant Burgers! This is an excellent way to incorporate veggies into our meals and try out some unique flavors. The slight spiciness from the gooey pepper jack cheese makes a perfect combination with the smoky flavor from the baked eggplant. The students really enjoyed making these and we hope you all try making them at home too!

1 eggplant, peeled
2 egg whites
1/2 cup Panko bread crumbs
Nonstick cooking spray
3 tablespoons mayonnaise
4 whole-wheat hamburger buns, warmed
1.5 cups baby spinach
8 thin slices of tomato
4 slices pepper jack cheese  

Preheat the oven and prepare the baking sheet with the non-stick spray. Cut 4 slices from the widest part of the eggplant, 2 inches thick for each slice. Dip the eggplant slices in the egg whites and then press it into the breadcrumbs. Place all the coated eggplants onto the baking sheet for 15 minutes. Turn the eggplants and bake again for 15 minutes, until golden brown. Assemble the burger with the tomato slices, spinach, mayo, cheese, and baked eggplants. Enjoy!
